Looking for a delicious light dinner with a bit of spice? Our spicy courgette & sweetcorn fritters are the one! Simply combine all the ingredients together and fry into fritters. Make sure to include the lime zest sprinkled on top at the end- this finishes off the dish perfectly- I couldn't stop eating these in our test kitchen!

SERVES 4
Ingredients:
100g courgette, grated
1 small can sweetcorn, approximately 200g, drained
1 spring onion, finely sliced
15g coriander, finely chopped
60g plain flour
1 jar Jalapeno Jam
1 lime
1 large free range egg, lightly whisked
2 tbsp milk
Sea salt and cracked black pepper
Oil, for frying
TO SERVE
1 pot soured cream
METHOD
- Place the grated courgette in some strong kitchen roll or clean cloth and squeeze out as much liquid as possible before placing in a large bowl.
- Add the sweetcorn, spring onion and coriander before stirring to combine. Sprinkle in the flour and stir again.
- Spoon in 1 tablespoon of the Jalapeno Jam and finely grate in a little lime zest. Add the egg and pour in the milk before whisking everything together to form a thick batter. Season well with salt and pepper.
- Heat 2 tbsp oil in a large, flat pan over a medium/high heat. Carefully spoon in a tablespoon of batter at a time for form little fritters and fry for 2 - 3 minutes on each side - lower the heat if your oil becomes too hot and the fritters are browning too quickly.
- Once golden on both sides, remove the fritters from the pan and place on a plate lined with a little kitchen roll whilst you cook the remaining batter. The batter should make 12 fritters.
- When ready to serve, stack 3 fritters on a plate. Spoon over a generous helping of soured cream before topping with a good spoon of Single Variety Jalapeño Jam. Finish the dish with a little more lime zest and enjoy!
