This recipe is so unbelievably quick and simple but can be served in a whole host of ways. Try swapping out the tacos for nachos: layer them up with melted cheese and top with the avocado sauce. The mince and sauce also makes for a great burrito filling - simply combine with rice and roll up.

Turkey Mince Tostadas with Avocado & Jalapeño Sauce

Ingredients

1 tbsp rapeseed oil

1 onion, finely diced

1 garlic clove, finely diced

Sea salt & cracked black pepper

500g turkey mince

1 tbsp sweet smoked paprika

1 tsp ground cumin

1 tsp cinnamon

40g Jalapeño Jam
-
400g tin black beans, drained
-
1 large ripe avocado, peeled & stoned

45g Jalapeño Jam
-
60g mayonnaise
-
1 tbsp lime juice
-
8 - 12 soft tacos, toasted

Fresh coriander leaves
-
Lime wedges
-
Food processor or blender

Directions
Heat the oil in a large frying pan over a medium to high heat. Add the onion and fry for 3 - 4 minutes until it begins to soften. Add the garlic, along with a pinch of salt and fry for a further minute.
Add the turkey mince to the pan and fry for 4 - 5 minutes until starting to brown. Sprinkle in the paprika, cumin and cinnamon and fry again for 3 minutes until the meat is completely cooked.
Spoon in the Jalapeño Jam to the mince and add the beans. Stir all the ingredients together well, allow to fry for a minute before removing from the heat. Season to taste.
To make the sauce, place all the ingredients in a blender or food processor along with a pinch of salt. Blitz until a smooth sauce in achieved. Pour into a bowl ready to serve.
Spoon the prepared mince into a bowl and place on a serving board alongside the avocado sauce, toasted tacos, lime wedges and a sprinkling of fresh coriander.
